It Starts With What You Like Best

While there are no hard and fast rules in pairing wine with food, there is one general rule that should be followed - It's the company that makes the meal, not the food or wine. But when you have that part of the equation accounted for, the rule of thumb is that the more delicately flavored the dish, the more delicately flavored the wine should be. Full-flavored foods can handle fuller-flavored wines, but the old theorem that white wine must be served with fish and chicken and red wine with "meat," simply doesn't hold true.
