New Mexico New Mexico has the oldest wine-making history in the U.S., second only to Florida, and dating back to the 1600s. The Rocky Mountains allow for the success of wine-growing, where the high elevation cools the valleys where grapes can grow. While its primary focus is currently on sparkling wines, some whites and spicy reds are now being produced.
